2 medium, tart apples chopped into ½" pieces ( I used Granny Smith )
2 zucchini, chopped or shredded
½ teaspoon cinnamon
1 Tablespoon maple syrup
1 cup diced onion
1 pound ground sausage, fried and crumbled ( I prefer turkey sausage )
1½ teaspoons salt, divided
¼ teaspoon pepper
4 large eggs
½ cup milk
1 cup blanched almond flour
½ teaspoon baking soda
½ teaspoon vanilla extract
Instructions
Preheat oven to 375 degrees. Line a baking sheet with parchment paper, and grease a 9x13" pan with oil.
Place zucchini in a colander and sprinkle with ½ teaspoon of salt to draw out moisture. Let rest.
In a large mixing bowl, toss together apples, onion, 1 teaspoon oil, cinnamon and maple syrup. Spread evenly on baking sheet. Roast for 20 minutes, add zucchini, roast an additional 10 minutes, then allow to cool for at least 5 minutes.
In a mixing bowl, combine eggs, milk, almond flour, baking soda, vanilla and remaining salt. Whist to thoroughly incorporate. Add cooled apple mixture and sausage; stir well.
Pour into prepared pan and bake for 35-45 minutes, until golden brown and puffy around the edges. Allow to cool slightly, then slice and enjoy.
*I sometimes add a jalapeno, 'cause i like things spice
