Nourishing Green Soup

Ingredients
  • 2 Tablespoons unrefined coconut oil
  • 2-3 yellow onions, pealed and roughly chopped
  • 1 zucchini - washed and roughly chopped
  • 2 jalapeno - remove as many seeds as you want - or don't want
  • 6 oz. Kale - roughly chopped
  • 1 head broccoli - roughly chopped
  • 4 cups bone broth
  • 1 head garlic, cloves removed and minced
  • ½ cup packed parsley
  • ½ cup packed cilantro
  • juice of ½ lemon
  • 1 - 1½ teaspoons salt
  • pepper
  • optional toppings:
  • sriracha
  • cilantro
  • roast brussels
  • seeds (pistachios, pumpkin, sunflower ... anything crunchy and salty )
  • feta or cotija cheese
Instructions
  1. In a large pot, heat coconut oil over medium heat. Add onions and cook 5 minutes, stirring occasionally. Then add jalapeno, zucchini, broccoli, and kale. Cook for an additional 5 minutes. Add bone broth and bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes. Turn off heat and add garlic. Let cool for 15 minutes. Working it batches, blend with cilantro, parsley, lemon and sea salt until very smooth.
