Pickled Cucumber and Onion

Ingredients
  • 4 Cucumber - pealed and thinly sliced
  • ½ - 1 red onion - thinly sliced
  • 1 Tablespoon kosher salt
  • 1 cup apple cider vinegar
  • ½ cup granular sweetener (I've used use raw sugar, xylitol, ethritol or "Gentle Sweet" with success)
  • ½ cup water
  • 1 teaspoon dill weed (optional, but I like it)
  • ½ teaspoon red pepper flakes (optional)
  • 1 jalapeno, thinly sliced (optional)
Instructions
  1. Place thinly sliced ( I use a mandolin) cucumbers and onion in a colander, and sprinkle with salt. Place over sink, and allow to marinade for 1-2 hours; don't rinse the salt off, just gently shake the colander to drain any moisture.
  2. In a separate bowl, mix remaining ingredients. Place veggies and sauce in jar and refrigerate, agitating every couple hours the first day. This taste better after it's all soaked together a few hours.
  3. *note: I reuse the vinegar juice 1-2 times. After all the veggies are consumed, slice and salt new cucumber and onion and marinade in the vinegar juice leftover from the last batch.
