Orange Roll Pancakes

I was really excited to try these; I’ve had orange rolls before, and love them, so these seemed like they would be a home run hit.  Clint was the wild card – he typically likes his food a bit more “basic” and plain.  

The pancakes ended up with a very soft orange flavor.  If you the citrus flavor more pronounced, definitely add the orange oil to the syrup.

After eating one bite, Clint exclaimed, “wow!  these are really good”  (what eloquence)  

Definitely adding these to our special breakfast rotation.

a sweet breakfast treat with a light citrus flavor
Ingredients
  • Filling:
  • 4 Tbs. softened butter
  • 3 Tbs. firmly packed brown sugar
  • 3 Tbs. granulated sugar
  • ½ tsp. cinnamon
  • 1 tsp. orange peel
  • Pancakes:
  • 1 cup flour (I used half whole wheat)
  • 3 Tbs. sugar
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. kosher salt
  • 1 cup sour cream
  • ¼ cup milk
  • 4 Tbs. melted butter
  • 1 egg, lightly beaten
  • Orange Buttermilk Syrup:
  • ½ cup butter
  • ¾ cup granulated sugar
  • ¼ cup orange juice
  • ½ cup buttermilk
  • 2 tsp. orange peel
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • couple drops of orange oil (optional)
Instructions
  1. Start by making the filling. Combine softened butter with sugars, cinnamon and orange peel. Transfer to a ziplock. (Real ziplocks work best here folks; the generic tend to burst, and that makes a mess)
  2. To make the pancake batter, whisk flour, sugar, baking soda, baking powder and salt in a large bowl. In a separate bowl, combine the wet ingredients. Add to dry ingredients and stir together, taking care not to over stir. Let rest 5-10 minutes.
  3. Use a ¼ cup to add batter to hot buttered griddle.
  4. Snip a corner off your Ziplock baggie and squeeze and swirl the sugar mixture onto the top of your pancakes.
  5. Once the pancake begins to develop bubbles on top, carefully flip and allow to finish cooking on the second side. Turn onto a plate, swirl side up.
  6. For the syrup, in a saucepan combine butter, sugar, orange juice, orange peel and buttermilk. Bring to a boil. Add baking soda, vanilla and orange oil. (optional) Be careful as this will bubble and foam.
  7. Drizzle over pancakes and enjoy!
